Lamb, glorious lamb

Whilst it’s often easy…


To rely on your Weber for the obvious.. Big hunks of beef, tender slabs of pork.. One of the most overlooked slow cooked pieces is the butterflied leg of lamb. We fired up the kettle a few hours before, marinated the leg in an IV Bag of extra virgin olive oil, garlic, fresh rosemary, oregano, lemon juice, bay leave, salt and pepper and left it to soften for around 4 hours.

Dr Mayer 2012Once it was cooked for around 2 hours (30 minutes on either side (direct) with around 45 wrapped in foil and cooked indirect it was ready to rest for 15 minutes, and then be carved, layered, and served on fresh pitas with a house made tzatziki sauce.

Lamb SouvlakiMix it with some hickory smoked corn, baked fries and baked eggplant, and you’ll never queue for a souvlaki ever again..
